Here we know all the secrets of a good grill, we have inherited them for generations. We learned them from Don José Inés Cantú, the man who presented our greatest pride to the world: the Arrachera.
He discovered it back in the 50s, in the mere north, in Monterrey, and by the 70s the whole country knew about it.
